Delicious Spring Potato Salad

Spring and summer are the seasons for bbqs and outdoor gatherings, and we think this potato salad recipe is a fantastic recipe to enjoy with your next bbq, garden party, or for a pot-luck recipe.

This Spring Potato Salad is super fresh, easy and absolutely delicious.

Most potato salads call for just mayonnaise. However, this recipe calls for a mixture of mayonnaise and yoghurt, making it a slightly healthier potato salad, and in our opinion, a much more delicious potato salad. The dressing is creamy and silky.

Along with the new potatoes we also add in some finely diced sweet red bell pepper, finely diced green onions, and a large handful of fresh flat leaf parsley. These added ingredients help to give texture, flavour, and a fresh hit of spring/summer.


The potato salad dressing is absolutely scrumptious, and is also pair's fantastic with a pasta salad.


What is in the potato salad dressing?


  • 1/2 cup of Natural Yoghurt

  • 2x tbsp of Mayonnaise

  • 1/4 cup of Good Quality Olive Oil

  • Juice of 1 small Lime

  • Heaped tsp of Dijon Mustard

  • 2x large pinches of Sea Salt

  • 2x large pinches of of Cracked Black Pepper

  • 1x heaped tsp of Garlic Powder

INGREDIENTS


  • 2 lbs New Potatoes - halved and boiled in salty water. Drain & allow to fully cool.

  • 1/2 cup of Natural Yoghurt

  • 2x tbsp of Mayonnaise

  • Heaped tsp of Dijon Mustard

  • 1/4 cup of Good Quality Olive Oil

  • Juice of 1 small Lime

  • 3x large pinches of Sea Salt

  • 2x large pinches of Cracked Black Pepper

  • 1x heaped tsp of Garlic Powder

  • 1x cup of finely chopped Green Onions

  • 1x small Red Bell Pepper - finely diced

  • Large handful of Fresh Flat Leaf Parsley - roughly chopped


METHOD


To a large mixing bowl or serving bowl add your cooked and cooled potatoes.

Layer with the finely diced green onions, red bell pepper, and fresh flat leaf parsley.

Add all of the other ingredients, and using a silicone spatula, thorughly mix together.

Ensure your potatoes are thoroughly and evenly coated in the delicious sauce.


Serve and enjoy. Or wrap and keep in the fridge until ready to serve.
